Day 4 · Deli / chiller drawer
The American's jewel
The deli or chiller drawer is what the American fridge has and the European usually doesn't: a drawer at near-0 °C, the ideal spot for the most perishable food.
Opened cold cuts and charcuterie, cheeses, and the meat or fish you'll use within a day or two all shine here. Many models let you tune the drawer's humidity or temperature.
Actually use it: it's the difference between a pack of ham lasting days or turning slimy in hours.
Art. IV
